Chicken Braised in Soy Sauce and Lemon

I've been making this affordable dish since college. Serve the chicken with a little of the sauce over brown rice or rice pilaf.

Every spring when the asparagus is cheap, this recipe seems to be a natural pairing. I make a little asparagus drizzle sauce by shaking together 2 tbsp olive oil, 1 tbsp lemon juice, salt, and lots of pepper.


Ingredients

4 boneless, skinless chicken breasts
1 tsp sugar or honey
2 tbsp soy or teriyaki sauce
1 tsp lemon rind
1 tbsp lemon juice
Salt and pepper
1 tsp minced garlic
1/4 tsp cayenne

Preheat oven to 425°F.

In a large baking pan, combine all ingredients and add chicken.

Place in oven and bake 40 minutes or until the chicken registers 170°F in the thickest part.
