Dill Potato Salad

For our 4th of July festivities this year I made my new favorite potato salad. Potato salad and I have had a difficult relationship in the past. I do not like pickles (although I love the taste of dill), eggs, or liberal use of yellow mustard in my potato salads—all of which dominate at most family gatherings. This recipe is perfect for those that like the scrumptious flavors of dill and sour cream. Enjoy! This serves 6 to 8 people.

Ingredients

1/4 cup white wine vinegar
4 tablespoons dried dill
3 pounds Red or Yukon Gold potatoes, cut into 3/4-inch pieces
Salt and pepper
1/2 cup mayonnaise (full or lower fat)
1/4 cup sour cream (I use nonfat)
1 tablespoon whole grain Dijon mustard
3 green onions, green parts only, sliced thin (or 2 tablespoons dried chives)


Combine vinegar and 1 tablespoon minced dill in bowl and microwave until steaming, 30 to 60 seconds. Set at room temperature until cool, 15 to 20 minutes.

Meanwhile, place chopped dill inside a filter bag* and tie closed. Bring potatoes, dill sachet, 1 tablespoon salt, and enough water to cover by 1 inch to boil in large pot over high heat. Reduce heat to medium and simmer until potatoes are just tender, about 10 minutes.

Drain potatoes thoroughly, then transfer to large bowl; discard sachet. Drizzle 2 tablespoons dill vinegar over hot potatoes and gently toss until evenly coated. Refrigerate until cooled, about 30 minutes, stirring once.

Whisk mayonnaise, sour cream, remaining dill vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper together until smooth. Add dressing to cooled potatoes. Stir in green onions. Cover and refrigerate to let flavors meld, about 30 minutes. Season with salt and pepper to taste. Serve. (Salad can be refrigerated for up to 2 days.)

*The filter bag for the dill sachet can be a couple of different solutions. The thing that I use are tea filters for making your own teabags out of loose tea (http://www.amazon.com/Melitta-Tea-Filters-40-Count-Pack/dp/B004NRTVWE/ref=sr_1_5?ie=UTF8&qid=1404583086&sr=8-5&keywords=tea+filters). I find them at World Market for about $3.50 for 40 filters. Twist the excess on the end and tie in a knot. The other thing you can do is use a basket-style coffee filter. Bring up the sides and tie together with kitchen twine.
