Chocolate Chip Cookies

These chocolate chip cookies are very satisfying and full of fiber. The suprise ingredient is chickpea (a.k.a. garbanzo) puree—don't worry, you can't taste the beans.
¾ cup unsweetened applesauce
1 tablespoon canola oil
1 cup brown sugar
1 – 15oz can chickpeas, washed and pureed
2 egg whites
2 teaspoons vanilla extract
1 cup unbleached white flour
½ cup whole wheat flour
½ cup wheat germ
½ cup old fashioned oats
1 teaspoon baking soda
¼ teaspoon salt
½ cup semi-sweet chocolate chips

In a large bowl, mix together applesauce, oil, sugar, chickpea puree, egg whites, and vanilla. Slowly mix in the dry ingredients in order. Lastly, mix in the chocolate chips. Place the bowl in the refrigerator. Preheat the oven to 350°F for 30 minutes. Drop by the tablespoon on to a cookie sheet about 2 inches apart in all directions. Bake for 11-13 minutes—until just done, don't burn them.

Makes 30-36 cookies; approx. 97 calories each, 1.7g fat, 18.6g carb, 1g protein
