Turkey Stroganoff

Believe it or not, I get those occasional cravings for Hamburger Helper. I think we've all gone through the Hamburger Helper phase, and some of us may still be there. Well, you can have the convenience of a one-pot-meal-in-a-box without all of the preservatives and extra fat.

Ingredients
1 pound lean ground turkey
1 teaspoon extra virgin olive oil
½ teaspoon black pepper
¼ cup finely chopped onion
1 large garlic clove, minced
2 cups no-yolk egg noodles
2 cups low-sodium chicken broth
2 tablespoons low-sodium tomato paste
1 tablespoon dry marsala (optional)
1 teaspoon dry mustard
¼ teaspoon oregano
¼ teaspoon dill
⅓ cup nonfat cottage cheese
½ teaspoon Worcestershire sauce
2 tablespoons unbleached white flour

Brown the ground turkey with the olive oil in a deep frying pan (think nonstick wok). Add onion, garlic, and herbs. Cook for 1 minute. Add broth, tomato paste, marsala, Worcestershire, cottage cheese, and egg noodles. Bring to a boil and boil for 3 minutes. Mix in the two tablespoons of flour to thicken. Turn the heat down to medium-low and let simmer for 20 minutes, stirring occasionally. Let sit for 5 minutes before serving. Serve with a dollop of nonfat yogurt (or nonfat sour cream) and a sprinkle of Parmesan. Serve with a green vegetable, like French green beans (haricots verts).

Serves 6; approx. 192 cal/serving, 5.6g fat, 15g carb
