Pita Pizza

With the preceding pita recipe, you can make really great snack or lunch mini-pizzas. There are a ton of great topping combinations out there, feel free to experiment!
1 garlic pita bread
3 tablespoons marinara or low-fat pizza sauce
¼ cup mozzarella cheese
3 tablespoons chopped cooked chicken (I like Foster Farms Chicken Breast Grilled Strips. You can find them at Costco or at many grocery stores.)
3 tablespoons chopped onions and bell peppers

Preheat the oven to 350°F. On the pita, spread the sauce evenly. Put a little bit of the cheese on the sauce. Spread the toppings around evenly. Sprinkle the rest of the cheese on top. Bake on a cookie sheet until the cheese is melted and slightly browned.
