Simple Swedish Chicken with Lingonberries

This dish is an IKEA restaurant staple, but the Swedes have been pairing lingonberry preserves with meat (and everything else) since forever. Lingonberries are a low-bush cranberry with a taste that isn't as intense as a cranberry. The flavor is fantastic and completely unique.

Ingredients

4 – 6oz chicken breasts
2 tablespoons garlic
1 tablespoon onion—dried or fresh
Salt and pepper

1 or 2 large Yukon Gold potatoes (or red potatoes, if you prefer)
Your favorite frozen veggie blend (I like the California mix—broccoli, carrots, cauliflower)

Preheat oven to 375°F. In a 9" × 12" baking dish, fill the bottom with about an inch of water. Place the chicken breasts in the pan with 1 tablespoon of garlic and the tablespoon of onion. Sprinkle salt and pepper over the top.

Wash and cut your potatoes into 8 equally-sized pieces. Place them in a pot with about 3-4 inches of water and bring to a boil. Let boil for about 5 minutes and then turn down the heat to simmer until done (easily able to pierce with a fork). Yukon Gold potatoes naturally have a buttery flavor, so no butter is necessary.

Microwave your veggies when the chicken is done and is resting on the stove. Serve your chicken, potatoes, and veggies with some lingonberry preserves. These can be found at most grocery stores and IKEA.
