Sloppy Joes

I like my Sloppy Joes open-faced with a layer of decadent, toasted mozzarella cheese with a side of spinach. This comfort food never fails to make my mouth water. Best yet, it's filled to the brim with hidden veggies.

½ cup chopped onion
2 cloves garlic, minced
1 pound lean ground turkey
½ cup sweet potato puree
½ cup butternut squash puree
¼ cup finely chopped bell pepper
½ cup low-sodium chicken broth
1 – 6oz can low-sodium tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon chili powder, or to taste
Salt and pepper
8 Franz Whole Wheat Sandwich Thins buns

In a large nonstick skillet—sprayed with cooking spray—on medium-high heat, cook onion and garlic until the onion starts to soften. Add the meat, breaking it up with a wooden spoon, and cook until it is no longer pink. Add the purees, bell pepper, broth, tomato paste, Worcestershire, chili powder and salt and pepper. Reduce heat to low, cover, and simmer until the liquid is reduced by about one-half (15-20 minutes).

Meanwhile, toast the buns. Spoon the mixture over the buns and top with a couple pinches of mozzarella cheese. Turn on the broiler and let the cheese melt for a few minutes, until the cheese is slightly golden. Serve with a fresh spinach salad.
